the mango

Riverford sent us a mango last week. I'm not that keen on mangoes, to be honest, so it sat in the fridge and looked at us in an accusing manner.

So last night I turned it into prawns with mango and basil, which worked rather better than I thought it would.

This week, Riverford sent us more beetroot ...

If you get more mangoes, I find a salad of big prawns, mango, and avocado, with a nice balsamic vinaigrette, works really well; the sharp/sweet of the mango against the creaminess of the avocado works really well!

Nice idea, but we don't like avocado either :)
