we had an odd assortment of things in the fridge, so a Google search was called for. And what we ended up with was duck fillets with pomegranate and shitaki mushrooms

it was a lot of faffing - cook pomegranate seeds with shallots, and butter. Add port, reduce down, sieve - which left about 3 teaspoons of pomegranate stuff.

then cook shitakis with more shallots, olive oil and butter. Add red wine, and reduce down.

sear duck fillets then roast. Combine pomegranate and shitake sauces, add chopped parsley, serve with basmati rice.

it was dead good.

on Saturday, we had fennel, onion and gruyere tartlets. They were really nice too.
