A Soup's Life
Nov. 10th, 2004 01:02 pmhome made soup is a lovesome thing. Just what we want at lunchtime is a bowl of soup, accompanied by a slice or two from a loaf fresh from the bread machine.
I always start a soup off as a "proper one", and then top it up day by day with whatever is about, until we either finish it, or it becomes inedible! The one we're having for lunch today came to life as chicken and lentil - chicken carcass boiled up for stock with some carrots and celery and onion and peppercorns. Then chicken removed, cleaned of meat and added back to the pan, with some red lentils. It was gorgeous, and lasted a couple of days.
then it all got interesting. The next day we tipped some green lentil dhal in, complete with loads of Indian spices. That was good. Day after that was some potatoes cooked in dripping and beef stock. That was good too.
next up was the remains of the tomato/mushroom/red wine/sage/onion sauce that went round the meatballs on Monday night. And the last few meatballs, come to that.
then yesterday, I sautéd some finely sliced leek tops in some butter and added them, And some bacon that needed eating up.
so today, we have an extraordinary fusion soup for lunch, and it's *gorgeous*. In fact, I may go back for another mugful.
