54 lbs of organic Dexter beef, all chopped and bagged, and ready for the freezer.

how it all went in, I'll never know, but somehow [livejournal.com profile] perlmonger managed it ...

What percentage of a cow is actually in that photo? How much did it cost and what cuts did you get, if you don't mind me asking?

he charges £3.10 per lb across the board, which is astonishingly good value. We often go up and collect it ourselves, and Steve is very happy - nay insistent :) - that you go and see the herd and how they're kept. Otherwise there's a courier charge of, I think, £25. Here's what we got this time (sorry, I still work in imperial!):

shin: 3lbs 5 oz
top rump: 3lbs
topside: 5lbs
silverside: 4lbs 11oz
rib roast: 4 lbs
braising steak: 4lbs 10oz
stewing steak: 5lbs
rump steak: 3lbs 10oz
fillet steak: 1lb 10oz
sirloin steak: 4 lbs
mince: 17 lbs

we also got a couple of huge lumps of beef fat, which I've rendered down.

I can't recommend him too highly - we've been buying beef from him for a few years now, and it is just gorgeous stuff.
