Unsurprisingly, the underlying software keeps track of that sort of thing (http://en.wikipedia.org/wiki/Special:Mostrevisions), and the article with the most revisions is "Hail to the Chimp (http://en.wikipedia.org/wiki/George_W._Bush)".
